These super easy, super delicious, healthy muffins are one of my new favourite treats! While browsing Pinterest I found a recipe for a strawberry banana Greek yogurt loaf, when I clicked the link it led the way to this yummy adaption of muffins! If you have a spare moment bake some up today, one word, YUM!
ingredients
1.5 cups plus 3 tablespoons of flour - I used 1 cup whole wheat and 1/2 cup plus 3 tablespoons all-purpose flour
1.5 tsp baking powder
1/4 tsp salt
1/2 cup loosely packed brown sugar
1.5 ripe bananas
2 eggs
3/4 cup Greek Yogurt (I used 0% honey flavour)
1 cup diced fresh strawberries
step one
pre-heat oven to 350 degrees
step two
combine flour, baking powder, and salt in a large mixing bowl
step three
in a separate bowl mash the bananas with a fork; add brown sugar, Greek yogurt, and eggs and blend using an electric mixer until smooth
pour the wet ingredients into the dry ingredients bowl and mix until combined; add the strawberries
step five
pour the batter into greased muffin tins (I lined mine, but still make sure to grease them!)
step six
bake for 30 minutes or until golden brown and fork inserted in the center comes out clean
step seven
ENJOY! add peanut butter, jam, butter etc.
